Chocolate Cake with Strawberry Cream Cheese Frosting

Lovely light chocolate cake filled with strawberry jam and finished with a delicious strawberry cream cheese frosting.


Making cakes can take quite some time. However, when I do have time, it’s my favorite thing to do. Removing that perfect cake from the baking pan, adding small detailed decorations.. I love it all. I even still love slicing a cake in half with a cake leveler. I’ve done it many times before, but it still gets met excited. Cutting a cake perfectly straight in half gives me such a great happy feeling. Yes, I’m weird. I know. But if you love baking too, I bet you know what I mean. Today’s cake is
a simple chocolate cake combined with strawberry flavors. I used the same cake base as I did with the chocolate and cream cake. The frosting is more or less the same as my best blueberry cream cheese frosting. Seriously, that’s one of my best frostings ever and I doubt I’ll ever have another favorite. Today, I’ll show you how to make a strawberry flavored version of this delicious creamy and light frosting. As for the filling, I used a lightly sweetened strawberry jam, but you can use any flavor or filling you want. Regular jam, Nutella, crème diplomat or just regular whipped cream are the first things that come to my mind. It’s your cake so choose whatever your heart desires.

Ingredients for the chocolate base
  1. 170 g all-purpose flour
  2. 30 g cocoa powder
  3. 1 tsp baking powder
  4. ¼ tsp baking soda
  5. ¼ tsp espresso powder (optional)
  6. ¼ tsp salt
  7. 100 g unsalted butter, room temperature
  8. 250 g caster sugar
  9. 2 eggs, room temperature
  10. 160 mL skim milk
Ingredients for the frosting
  1. 225 g frozen strawberries
  2. 40 g sugar
  3. 15 g corn starch
  4. 200 g cream cheese, room temperature
  5. 200 g unsalted butter, room temperature
  6. 75 g confectioner's sugar
Other ingredients
  1. 8 strawberries, washed and halved
  2. 150 g (light) strawberry jam
To make the chocolate cake
  1. Preheat the oven to 170C and line a 22 cm (9 inch) round baking pan with baking paper. Set aside.
  2. In a bowl, quickly mix the flour, cocoa powder, baking powder, baking soda, espresso powder and salt. Set aside.
  3. In a large bowl, cream the butter and sugar until light and creamy.
  4. Whisk in the eggs one by one.
  5. Add half of the flour mixture and all the milk to the batter. Beat until just mixed.
  6. Add the rest of the flour mixture and beat until just mixed.
  7. Pour the batter in the baking pan and level it with a spatula.
  8. Bake the cake 40-50 minutes at 170C or until a cake tester comes out clean.
  9. Let the cake cool for 10 minutes in the pan before inverting it onto a cooling rack. Then, let the cake cool completely.
To make the frosting
  1. In a saucepan, mix the strawberries, sugar and corn starch. Bring this mixture to a boil while stirring. Remove the pan from the stove and blend until smooth. Set aside to cool.
  2. In a bowl, beat the cream cheese, butter and confectioner's sugar until light and evenly mixed.
  3. Beat in the strawberry mixture.
  4. Chill the frosting at least 30 minutes in the fridge before using.
To assemble te cake
  1. Using a cake leveler, cut the cake in half.
  2. Pipe a "dam" of frosting on the edge of one half and fill the remaining space with strawberry jam.
  3. Place the other half of cake on top and decorate to taste. Finish the cake with fresh strawberries.
