Ingredients
  1. 25 g cocoa powder
  2. 3 Tbsp boiling water
  3. 115 g unsalted butter, room temperature
  4. 200 g caster sugar
  5. 3 eggs, room temperature
  6. 125 g sour cream
  7. 180 g all purpose flour
  8. ¼ tsp baking powder
  9. 1/8 tsp baking soda
  10. ¼ tsp salt
  11. 1 tsp vanilla paste (or extract)
Instructions
  1. Preheat the oven to 180 degrees Celcius. Line a cake tin with parchment paper.
  2. In a small bowl, mix the cocoa powder and boiling water until you have a smooth paste. Set aside to cool.
  3. In a large mixing bowl, cream the butter and sugar until creamy and fluffy.
  4. Mix in the cocoa powder paste.
  5. Add the eggs and mix until completely incorporated.
  6. Add the sour cream. Mix until incorporated.
  7. Add the flour, baking powder, baking soda, salt and vanilla paste. Mix until just incorporated.
  8. Transfer the batter to the cake tin.
  9. Bake the cake 50-55 minutes at 180 degrees Celcius or until a cake tester comes out clean.
  10. Let the cake cool at least 10 minutes before transferring to a cooling rack.
