Ingredients for the strawberry cheesecake
  1. 200 g cream cheese, softened
  2. 75 g granulated sugar
  3. 60 g strawberry jam/jelly
  4. 1 Tbsp flour
  5. 3 drops red food coloring (optional)
  6. 1 egg yolk
Ingredients for the pound cake
  1. 115 g unsalted butter, softened
  2. 200 g granulated sugar
  3. 2 eggs (L), room temperature
  4. 125 g sour cream, room temperature
  5. 2 tsp vanilla extract
  6. 200 g all-purpose flour
  7. ¼ tsp baking powder
  8. 1/8 tsp baking soda
  9. ¼ tsp salt
Instructions
  1. Preheat the oven to 175 C and line a cake tin with baking paper.
  2. In a bowl, mix the cream cheese and sugar until smooth and mixed evenly.
  3. Add the strawberry jam, flour and red food coloring. Mix evenly.
  4. Mix in the egg yolk until just incorporated. Set aside.
  5. In another bowl, beat the butter and sugar until light and creamy.
  6. Mix in the eggs one by one. Add the second egg when the first is fully incorporated.
  7. Mix in the sour cream and vanilla.
  8. In a small bowl, mix the flour, baking powder, baking soda and salt.
  9. Add the flour mixture to the batter and fold until just incorporated. Take care not to overmix.
  10. Alternately add the cake and cheesecake mixture to the cake tin.
  11. Place the cake tin in a water bath filled with 1-2 cm water.
  12. Bake the cake 65-75 minutes at 175 C or until a cake tester comes out clean. The cheesecake at the center should be slightly wobbly.
  13. Let the cake cool completely. Then, let it set in the fridge for at least 2 hours or overnight.
