Carrot cake bars. Moist and fluffy. These bars get their moistness from the grated carrots. Each bar is stuffed with plump raisins and crunchy walnuts. Finally, you can’t make a good carrot cake without cream cheese frosting.
After quite a few vegan recipes, I thought it was time for some “normal” baking again. So for my boyfriend’s birthday a few weeks ago, I decided to make carrot cake. Because I was short on time, I went for bars rather than a cake. Bars are so convenient because:
- Take less time to bake than most cakes
- Need little to no decorating skills
- Are easier to transport
I’m happy to say my bf’s co-workers loved these bars. Well, most of them anyway: Some were scared these bars would taste like carrots. But I promise you, carrot cake bars taste nothing like carrots. It’s time for cupcakes again! Peanut butter banana cupcakes. Honestly, I should call these peanut butter cupcakes with a hint of banana, because these cupcakes are seriously peanut butter overload! If you’re a peanut butter lover, these cupcakes will be right up your alley. My boyfriend went crazy crazy crazy over these. Mind you, he’s a peanut butter addict (maybe not as addicted as my sister is though). Needless to say, if you don’t like peanuts/peanut butter you should definitely skip these, because there’s no way around the peanut butter flavor. Lovely light chocolate cake filled with strawberry jam and finished with a delicious strawberry cream cheese frosting.
Making cakes can take quite some time. However, when I do have time, it’s my favorite thing to do. Removing that perfect cake from the baking pan, adding small detailed decorations.. I love it all. I even still love slicing a cake in half with a cake leveler. I’ve done it many times before, but it still gets met excited. Cutting a cake perfectly straight in half gives me such a great happy feeling. Yes, I’m weird. I know. But if you love baking too, I bet you know what I mean. Today’s cake is
Creamy, light blueberry frosting made with cream cheese using REAL blueberries. No additives. This frosting doesn’t turn rockhard in the fridge like buttercream, which makes it perfect for cupcakes or cakes you want to serve straight from the fridge. One batch is enough for 12-14 cupcakes.
It’s getting dark outside early these days, making me feel a bit gloomy. Don’t get me wrong, I love that cosy feeling autumn and winter bring us; the holiday spirit swelling inside. Yet, I can never help feeling a bit gloomy. It makes me contemplate life (too much). “Am I doing what I should be doing?” “Do I worry too much?” “Do I have my priorities straight?” Luckily, I always have a couple of bright lights in my life for these gloomy days: family, friends and food.
