Fluffy matcha cupcakes with a delicious, creamy chocolate frosting. A combination of bitter and sweet. These cupcakes are 100% vegan and are just as good as non-vegan cupcakes. Recipe for two so no leftovers.
Okay, let’s get serious. I need to know this about you: Are you a matcha lover? If the answer is yes, we have to be best friends. Because I’m in L-O-V-E with matcha (ssttt.. don’t tell my bf). Matcha, aka green tea, tastes so good! In baking, it makes the perfect combination of sweet and bitter. You either hate it or love it. Obviously, I’m the latter. So today, we’re going to make VEGAN matcha cupcakes with a delicious dark chocolate ganache. Yes, the ganache is also vegan! In addition, I made this recipe for two so you don’t have to worry about binging on leftovers. Gosh, I feel so healthy now.. How about you? 😉 Read more
Soft banana cupcakes made with REAL bananas, topped with creamy and sweet peanut butter frosting. Peanut butter lovers: this is YOUR recipe. As a bonus, there are no eggs in this recipe.
It’s time for cupcakes again! Peanut butter banana cupcakes. Honestly, I should call these peanut butter cupcakes with a hint of banana, because these cupcakes are seriously peanut butter overload! If you’re a peanut butter lover, these cupcakes will be right up your alley. My boyfriend went crazy crazy crazy over these. Mind you, he’s a peanut butter addict (maybe not as addicted as my sister is though). Needless to say, if you don’t like peanuts/peanut butter you should definitely skip these, because there’s no way around the peanut butter flavor. Or you could make the banana cupcakes and make some other frosting (chocolate?) or just go for whipped cream. By the way, did I mention the cupcakes are egg-free? Read more
Lovely light chocolate cake filled with strawberry jam and finished with a delicious strawberry cream cheese frosting.
Making cakes can take quite some time. However, when I do have time, it’s my favorite thing to do. Removing that perfect cake from the baking pan, adding small detailed decorations.. I love it all. I even still love slicing a cake in half with a cake leveler. I’ve done it many times before, but it still gets met excited. Cutting a cake perfectly straight in half gives me such a great happy feeling. Yes, I’m weird. I know. But if you love baking too, I bet you know what I mean. Today’s cake is
Creamy, light blueberry frosting made with cream cheese using REAL blueberries. No additives. This frosting doesn’t turn rockhard in the fridge like buttercream, which makes it perfect for cupcakes or cakes you want to serve straight from the fridge. One batch is enough for 12-14 cupcakes.
It’s getting dark outside early these days, making me feel a bit gloomy. Don’t get me wrong, I love that cosy feeling autumn and winter bring us; the holiday spirit swelling inside. Yet, I can never help feeling a bit gloomy. It makes me contemplate life (too much). “Am I doing what I should be doing?” “Do I worry too much?” “Do I have my priorities straight?” Luckily, I always have a couple of bright lights in my life for these gloomy days: family, friends and food. Naturally, I can’t see my family and friends 24/7. They have a life too. So it won’t come to you as a surprise that I’ve done quite some baking/cooking these days. And today’s one of my all time FAVORITE frostings. Honestly, I feel like it’s my best frosting so far. Read more
Beautiful soft red velvet cupcakes with lush cream cheese frosting! A combination of chocolate and vanilla in a recipe for two persons. That’s right, no leftovers to binge on or to throw out 😉
I love to bake and I love to eat. So does my boyfriend. Well, he loves my baking anyway and he definitely loves to eat. I have only seen him bake something once or twice :’) However, sometimes our love for eating is just no match for my love to bake and cook. We have a freezer stuffed with three kinds of muffins. I believe we have a few other bake leftovers too :’) (Freezer = my best friend) So when I craved for red velvet cupcakes, I decided to experiment a two person recipe. Or as I’d also like to call them: No guilt red velvet cupcakes 😀 No waste, no leftovers to binge on. It doesn’t get any more perfect! Read more
