Meet my strawberry and cream birthday cake. Okay, calling it a birthday cake is a bit weird because basically any cake can be a birthday cake. However, this type of cake reminds me of birthdays which is why I call it a “birthday” cake. You can just call it “cake” though 😉 Also, this cake is probably my favorite kind of cake: A fluffy sponge with creamy, light whipping cream. As I’ve mentioned before, buttercream is not really my cup of tea. Whipping cream is totally up my alley though (although my lactose intolerance doesn’t really agree lol). And my bf.. he is even more in love with whipping cream. He’d marry it if he could lmao. (I wish I was kidding.) So if you’re anything like me/us, this cake is going to rock your world.

Aaand we’re halfway the week! That means I’ve got a new recipe for you guys. After multiple single serving recipes, I thought it was time for something bigger. So this time, I’m sharing a large coffee cake; suitable for at least 16 people. This coffee cake is made with sour cream, which makes it super moist and fluffy. In addition, this cake has a layer of strawberry and chocolate in between and is topped with plenty of fresh strawberries and chocolate chips. As many chocolate chips as you want!

And we’re halfway January! How are your new year’s resolutions going? Did you survive Blue Monday? (I didn’t feel like blue monday was any different than other Mondays tbh.) As you might already know, I don’t really do New Year’s resolutions. But as always, I want to focus more on the positive, less on the negative and move forward. It’s a daily resolution though. Just a few days after we hit January 1st, she emailed me if I was interested in an interview. Ofcourse I said yes! She also asked me to send a few snapshots so I decided to make a Beautygoddess cupcake (scroll down for the photo!). And to kill two birds with one stone, I decided make the Beautygoddess cupcake from a single serve recipe. Last week I shared single serving apple crumble. This week, it’s CUPCAKE time! Making cakes can take quite some time. However, when I do have time, it’s my favorite thing to do. Removing that perfect cake from the baking pan, adding small detailed decorations.. I love it all. I even still love slicing a cake in half with a cake leveler. I’ve done it many times before, but it still gets met excited. Cutting a cake perfectly straight in half gives me such a great happy feeling. Yes, I’m weird. I know. But if you love baking too, I bet you know what I mean. Today’s cake is

Another Monday, another week to make awesome things happen! What’d you guys do last week? Me and my boyfriend went indoor sky-diving last weekend. I got him the sky-diving for his birthday. I’m not much of an adventurous person, but I must admit sky-diving was quite awesome. Okay, the first two-sessions I bounced around with no control, but by the third and fourth session I sort-of got the hang of it. You should definitely try it out sometime! It’s not as scary as it looks. Promise! ^^
Anyway, in a few weeks it’s Valentine’s Day. Although I don’t “celebrate” Valentine’s Day, I thought it’d be nice to share a couple of recipes with you guys.
