Vegan Coconut Agar-Agar (Jelly)

These vegan (and glutenfree) coconut jelly squares are just as snappy and refreshing as gelatin-based jelly. Serve these squares cool and you’ll have the perfect summer snack!


 Today’s recipe is another coconut dessert! Yes, I know, I’ve shared coconut cupcakes, a soft coconut pudding, a coconut tapioca dessert and today will be another one. Who cares? Let’s just go coconut-crazy together! Because these beautiful coconut jelly squares aren’t just delicious, but very refreshing too. Great for summer. Yes, just like the coconut tapioca dessert. As usual this recipe is super simple and quick to make. Additionally, you can make all kinds of varieties from this basic recipe. At the end of this post you will find a cute serving suggestion too. It includes a pieshell and mango. Trust me, you will love it.

So instead of the usual gelatin, this recipe uses “agar-agar”. Agar-agar originates from a seaweed and has gelatin-like features. The difference lies in temperature for dissolving and temperature for setting, but I won’t be discussing that in this post. If you want to know more about this, just google agar-agar. You will probably find it in one of the first hits (what would the world do without google?). Anyway, because agar-agar is from seaweed, this recipe is suitable for vegetarians. Furthermore, there’s no dairy or anything so vegans: you are safe too ^^

To be honest, today’s recipe shouldn’t even be called a recipe, because it seriously is too easy. Fail-proof. You will start by adding you ingredients in a saucepan. Then, you will give it a good mix to distribute everything evenly. Once mixed, you will bring the mixture to a boil. Finally, you will transfer your mixture to your desired pan and let it cool completely to set. 

This jelly tastes best when served cool, so I strongly recommend to store it for at least another hour in the fridge. It makes the jelly extra refreshing too. As a nice serving suggestion, you could pour the jelly mixture in a pieshell. It makes the jelly looks so much more sophisticated and you could actually serve it as slices of pie, refreshing slices of pie that is 😉 However, if you’re feeling lazy, just dunk it in a square baking pan and cut it into squares. Don’t even get out the forks and eat these babies with your bare hands. It won’t take long before your batch is gone, anyway. These jelly squares are so delicious, everyone will want to have seconds and thirds!

Yields 12
Snappy, refreshing coconut jelly made with agar-agar (vegan). Top with your favorite fruits or eat as is. This jelly is best served cool.

  1. 400 mL (light) coconut milk
  2. 100 g granulated sugar
  3. 1½ tsp agar-agar powder
  4. fruits, cubed (optional)
  1. Spray a baking pan with baking spray.
  2. In a small saucepan, whisk the coconut milk, sugar and agar agar together.
  3. Heat the mixture on medium-low heat.
  4. Once the mixture is boiling, take it of the heat.
  5. Pour the mixture in the baking pan and let it cool to room temperature.
  6. Once cooled, place the jelly in the fridge for at least 1 hour.
  7. Cut into cubes and serve with fruits or as is.

  1. ahh die zijn zo lekker en fris! De meeste jellos zijn erg zoet, maar die zijn voor mijn gevoel perfect gecombineerd met natuurlijke zoete en neutrale smaken 😀
