Ingredients
  1. 1½ cups short grain rice, washed
  2. 2 cups water
  3. 1½ Tbsp rice vinegar
  4. 1 Tbsp mirin
  5. 1 package nori sheets
  6. ½ cucumber, cut into strips
  7. ½ yellow bell pepper, cut into strips
  8. ½ avocado, cut into strips
  9. 50 g julienne carrot
  10. soy sauce, for dipping
Instructions
  1. In a rice cooker, cook the rice and water until done.
  2. Stir in the vinegar and mirin. Set aside to cool.
  3. Spread a layer of rice on a nori sheet.
  4. Place the cucumber, bell pepper, avocado and carrots on top of the rice.
  5. Firmly roll up the nori sheet and cut the roll into thick pieces.
  6. Serve immediately with soy sauce.
