(Vegetarian) Cheese omelette and spinach wrap

Delicious creamy cheese omelet combined with fresh spinach, mayonaise and tangy sun-dried tomatoes. All rolled in a flour tortilla to make the perfect wraps.

Phew, after weeks of hard work, we finally had a housewarming party. For me, the key ingredient to a party with more than 4 people is delicious bite-size food (a.k.a party food). And I decided to go all the way. I served: chicken quesedillas, vegetarian quesedillas, salmon wraps, vegetarian wraps, vietnamese spring rolls (with dipping sauce!), homemade cookies and cream puffs. Yes, all homemade. Starting early in the morning and finishing barely before the first guest arrived! I loved it. If only party food was my job… ♥ Oh, don’t worry, I will share all recipes with you guys.

Today, I will share the recipe for the vegetarian wraps. These were definitely a hit at my party: everyone loved it. Aside from the flavor, these are so easy to make too! One bite includes: a piece of soft tortilla, a dollop of creamy mayonaise, pieces of tangy sun dried tomatoes, some cheesy melt-in-the-mouth omelette and a whole lot of fresh crunchy spinach. Hungry, yet?

So we start with the omelette mixture, which is só easy I shouldn’t even call this a recipe: Take a few eggs with an equal number of tablespoons of milk. Add some chopped chives, pepper and salt, and give it a whisk to combine (does anyone do this with chopsticks too?) Using a large frying pan, cook the omelettes. No worries, cooking omelettes is really not that hard. You just need a good dose of patience: To get a smooth, melt-in-the-mouth texture, cook on low heat. There’s no way for it to go wrong. Just don’t lose your patience and crank that heat up, for the high temperature will turn your eggs into a big piece of rubber. Trust me, you don’t want that. Finally, remember to add your delicious cheese somewhere in the process of cooking the omelette. There’s no need to explain the cheese, right? 😉 

You will put the wrap together by starting with a base of mayonaise and sun-dried tomatoes on the flour tortillas. Use any mayonaise you like. I used yoghurt-mayonaise, which I love because it tastes less creamy and is lighter than regular mayonaise. However, feel free to substitute with the real stuff if you like. Then, you will add the sun-dried tomatoes for texture and for the tangy flavor. The tomatoes will compliment the creamy omelette you place on top. Finish with a handful of fresh spinach (or more if you like 😀 ) and wrap it up! Use toothpicks or something similar to keep the wrap rolled up. I used some handy-dandy, cute wooden mini forks from our local dollar-store. To serve as party food, cut the wrap into bite-size pieces and place it on a big platter. Perfect.

Vegetarian Cheese Omelette and Spinach Wraps
Serves 12

Ingredients
  1. 8 eggs
  2. 8 Tbsp milk
  3. 100 g Emmentaler cheese*
  4. 2 Tbsp chopped chives
  5. pepper and salt
  6. 4 large flour tortilla's
  7. 4 Tbsp mayonaise
  8. 12 sun dried tomatoes, cut into slices
  9. spinach, washed and drained
Instructions
  1. In a bowl, whisk the eggs, milk, cheese, chives, pepper and salt to a smooth mixture.
  2. Using a large non-stick skillet, bake about 4 omelettes on low heat. Set aside.
  3. Assemble the wraps by starting with a base of mayonaise and sun dried tomatoes on top of a flour tortilla.
  4. Add an omelette on top and finish with a handful of spinach.
  5. Roll the wrap up and keep it in place using tooth picks.
  6. Cut into bite-size pieces and serve.
