BBQ Chicken Nachos

My boyfriend and I are usually both quite busy throughout the week. That’s why we try to spend quality time in the weekends. Whenever “movie night” is planned, this is one of my (and his) FAVORITE dishes: BBQ chicken nachos. Easy, quick and super super delicious. Guaranteed crowd pleaser. This is one recipe you can’t miss.

My gosh, doesn’t this photo looks GORGEOUS? As I’m writing this, I’m salivating all over again. And you are too. I know it. Don’t be shy to admit it 😉 Now, I’ve shared my Asian Style Nachos with you guys before, but today’s nachos might be my new favorite. BBQ-sauce, chicken and lots of good melty cheese. Oh, and don’t forget the sour cream. Sour cream is love. Tell me, who can resist this? In addition, nachos are so e-a-s-y to make. Really, trust me. By adding just a couple of ingredients, you turn simple (boring) chips into a true foodgasm. Anything is possible, if you just believe (who can tell me which movie that is? 😀 )

BBQ Chicken Nachos

Ingredients
  1. 150 g chicken breast, cooked and shredded
  2. 1/3 cup bbq sauce
  3. ½ large onion, chopped
  4. 1 Tbsp oil, for cooking
  5. 120 g salted tortilla chips
  6. 80 g canned sweet corn, washed and drained
  7. ½ red bell pepper, diced
  8. 50 g grated cheese
  9. 10-20 pcs jalapenos (optional)
  10. 50 g sour cream
Instructions
  1. Preheat the oven to 200C.
  2. Heat some cooking oil on medium high heat.
  3. Sauté the onions until translucent and golden brown.
  4. Add the shredded chicken and bbq-sauce. Mix and cook until the sauce thickens and coats all of the chicken. Set aside.
  5. In a oven-proof bowl, add half of the nachos.
  6. Scatter half of the corn, paprika and chicken on top.
  7. Add the remaining nachos, corn, paprika and chicken. Top the dish with grated cheese.
  8. Bake the nachos about 8-12 minutes at 200C or until the cheese has melted and is starting to turn golden brown.
  9. Scatter the jalapenos on top and add the sour cream. Serve immediately.
